This is a relatively easy dish
that’s quite delicious and full of spices. Garlic
Pitted Olives gives this dish its eccentric great
1 Frying chicken, cut up
½ Cup olive oil (product #148)
½ Cup chopped onion
¼ Cup diced green pepper
1 Cup uncooked rice
1 Clove garlic, minced
1 28-oz Can whole tomatoes (with liquid)
12 Garlic Olives Pitted (product #225)
½ Cup chicken broth
1 Teaspoon salt
1 Teaspoon chili powder
¼ Teaspoon basil
¼ Teaspoon oregano
Brown chicken lightly in olive
oil. Remove chicken from pan. Brown onion and green
pepper in oil. Remove from pan. Fry rice in pan
until golden in color, stirring frequently.
Add onion, green pepper, garlic, whole tomatoes,
chicken broth and all seasonings to fried rice.
Bring to a boil. Add browned chicken, cover tightly
and simmer for 30 minutes until tender.
This dish serves 4 people.
Serve with fruit salad. Perfect!
